

ST. PATRICK’S SHAMROCK GUMMIES
03/14/2023Four more days until St. Patrick’s Day. Still plenty of time to make some yummy treats. Today’s recipe is for these cute little shamrock gummies.

They are similar to gumdrops only less chewy and their mini size makes it easy to only grab one or two.

They would be adorable on a St. Patrick’s charcuterie board. If only I had time to pull that off. Maybe next year.

They are perfect to place on a St. Patrick’s bar cart, as well.

Or, package them up in mini baggies and hand them out as St. Pat’s treats for the kids.

Whatever you do with them, they are perfectly adorable St. Patrick’s Day snacks.

Shamrock Gummies
Ingredients
1/2 cup Applesauce
2 1/4 cups sugar + extra for dusting
(2) 3 ounce boxes lime Jell-O
2 envelopes unflavored gelatin
Directions
- Line a 9"x13" baking dish with parchment paper.
- Mix all ingredients in a saucepan over medium-high heat. Stir constantly until boiling. Boil for 1 minute.
- Remove from heat and pour into prepared baking dish making sure mixture is level.
- Place baking dish in refrigerator for 2 hours or until set. Once set, remove from refrigerator. Dust top of mixture with sugar.
- Using a mini shamrock cookie cutter, cut out shapes. Immediately dip each shape into sugar to coat and remove stickiness.
