LEPRECHAUN CRINKLE COOKIES
03/15/2023Today we have the prefect treat to snack on while the kiddos are making their leprechaun traps. Maybe leave one or two near the trap to lure him in. I’m not going to lie, I’m kind of glad the leprechaun trap idea didn’t become popular until after my kids were grown. :0)
Similar to chocolate crinkle cookies, these cookies are the ideal St. Patrick’s treat with their fun green color. The recipe calls for vanilla cake mix which I swore I bought. However, apparently my memory failed me. (Seems to be happening a lot more recently.) But I did have a lemon cake mix on hand and it gave the cookies a nice lemon flavor. Don’t be afraid to improvise.
Leprechaun Crinkle Cookies

1 box vanilla cake mix
2 eggs
1/2 cup vegetable oil
Green food coloring
3/4 cup powdered sugar
Directions
- In a mixing bowl, mix cake mix, eggs and vegetable oil together thoroughly combined.
- Add drops of green food coloring to dough, and mix until thoroughly combined until the preferred color of green is achieved.
- Place dough in refrigerator for one hour.
- Preheat oven to 350 degrees.
- Once chilled, roll dough into tablespoon sized balls, then roll in powdered sugar to coat and place on a cookie sheet.
- Bake 7 minutes or just before cookies begin to brown.
