4TH OF JULY STAR FRUIT PIZZA COOKIES
06/26/2023When I think of the 4th of July, I think of sun, heat, mosquitos (these are good memories), fresh fruit, ice cream, fireworks, etc. I thought these adorable fruit pizza cookies fit right into all things Independence Day.
My daughter actually made these cookies this past weekend. She used a decorator sugar cookie recipe for the base which has a nice hint of almond. Then she spread on a layer of cream cheese/sugar mixture and finished off the patriotic star cookies with fresh blueberries and strawberries slices. I think they are the cutest cookies. She did well! Now if I can just get her to make more next weekend so I can take them to holiday festivities.
4th of July Star Fruit Pizza Cookies
Ingredients
- Cookies
4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon course salt
2 sticks unsalted butter, softened
2 cups sugar
2 eggs
2 teaspoons almond extract
- Icing
11 ounces cream cheese, softened
1 teaspoon vanilla or almond extract
3/4 cup sugar
- Fruit
Fresh Strawberries
Fresh Blueberries
Directions
- Cookies
- Sift together flower, baking powder and salt into a bowl. Set aside.
- Beat butter and sugar in a large mixing bowl on medium-high speed for three minutes.
- Beat in eggs, one at a time.
- Reduce mixer to low speed.
- Add flour mixture and beat until combined.
- Add almond extract and beat until incorporated.
- Form dough into a ball and wrap in plastic wrap.
- Refrigerate dough at least one hour.
- Preheat oven to 325 degrees.
- Roll out dough to 1/2-inch thickness on a floured surface.
- Using a medium star cookie cutter, cut out cookies and place on a baking sheet.
- Refrigerate cutouts for 30 minutes.
- Bake cookies for 17 to 19 minutes or just until edges begin to brown.
- Transfer cookies to a wire rack to cool completely.
- Icing
- Beat all ingredients together in a mixing bowl.
- Spread mixture over cooled sugar cookies.
- Fruit
- Thinly slice strawberries.
- Arrange fruit on cookies.
