QUICK BREAKFAST IDEA | EGG CUPS
03/02/2023I am all about simple breakfast ideas I can grab on the way out the door in the morning. While I would prefer a sugary bowl of cereal or an iced donut, I’m not 16 anymore and have to watch what I eat. I’m usually not hungry early in the morning but about an hour or two into my workday, the ‘ol tummy starts a grumbling. Homemade egg cups are one of my favorite grab and go breakfasts to warm up when I get hungry at work. Bonus – they are heathy and good.
I found these little glass jars at TJ Maxx which are perfect for egg cups. I personally prefer egg cups cooked in a water bath rather than in a muffin tin in the oven.
To me the worst part of the recipe is getting the pan full of egg mixture and water into the oven. I found that using a funnel is the method that works best for me to avoid getting water in the egg mixture.
I like to mix up the eggs and cheese, pour that into the glass jars and then place the rest of the ingredients into the jars separately. That allows me to make different versions based on what each family member likes. I prefer bacon, mushroom and green onions. Others prefer just sausage. Trust me when I say the Gruyere cheese makes the recipe. So good!
I use a Sharpie to indicate “B” for bacon & “S” for sausage. The Sharpie can be removed using rubbing alcohol, if desired.
